Winter Dinner Party ideas on a Budget by Lilly Diep

Stuck on what to host at your dinner party? Well Co-op has got you covered. I made roast chicken with all the trimmings that feeds nine people (great idea if you are on a budget too). Here are my recipes and method. 

Ingredients: chicken, cauliflower, carrot, potatoes, mature cheese, fine beans, parsnips, tenderstem broccoli, duck spring rolls, mac and cheese bites, chorizo pigs in blanket, pork chipolatas, bacon rashers, Brussels sprouts, milk, paxo onion and sage stuffing

Method: 

🐔Roast Chicken: preheat oven at 190 degree. butter the chicken by putting it under the skin, cover with foil and bake in the oven as per packet instructions depending on the size. 

Trimmings:

🥔Roast potatoes: peel and par boil for 5 – 10 mins, drain the water in a shiv, give it a shake to fluff the potatoes, sprinkle flour and ensure all potatoes are covered. Sprinkle some oil in the baking tray and bake for 45mins at 180 degrees.

🥕Parsnips & Carrots: Peel and Chop the veg, place in a baking tray with veg oil ensure all is covered, cover with tin foil and Roast for 25 mins after half way take the foil off and continue to roast until nice and golden at 190 degrees.

🥦Cauliflower & Cheese: take the outer leaf off and put this to aside. Slice the stork off and dice the Cauliflower and par boil for 5 – 8 mins. Drain and put to aside in baking tray.

Cheese sauce: 3 cup of skimmed milk in a pan over low heat. Add 2 table spoon of plain flour and stir with a whisk untill thickened (approx 5-8mins), once thicken add 2 handfull of grated cheese of your choice and stir (I used mild chedder and mature), pour over the Cauliflower and sprinkle 2 handfull of cheese and bake for 45 mins or untill cheese is brown at 190 degrees. 

🥦Beans, Broccoli & Cauliflower leaf: chop the ends of the beans then chop them in half and Place it in a plate, chop the cauliflower leaf in quarters and place this on a plate, wash the broccoli and place this on a plate thay fits in your steamer, I used 3 tier steamer, steam for 15 mins. 

🐖Pigs in blankets: wrap bacon rashers around the pork chipolatas sausages, place on a baking tray on baking paper, (this will stop it from sticking) and bake for 20 mins. Turn half way so it cooks evenly. 

🌱Stuffing – as per packet, empty packet in a bowl, add 400ml hot water and place in a baking tray and bake for 20 mins at 210 degrees.

🐷Chorizo pigs in blankets – bake in the oven as per packet instructions.

🦆Duck Springrolls and 🧀 Mac and Cheese bites – bake in the oven as per packet instructions

– Bisto Gravy – as per instructions

With all the food, I still have left overs and great to have multiple meals from it.  Are you ready for a festive meal? Is this good value for £60?
