A Roast Dinner Feast: Garlic, Lemon and Rosemary Chicken by Natasha Bhasin

I made this dish as part of the My Soho Times x Co-op Collaboration “Comfort Food Under £60 Challenge”. This was my chosen dish as it is a family favourite. Who doesn’t love a flavoursome Roast Chicken? With Christmas approaching I felt that this was the perfect way to get in the Christmas spirit!
Ingredients:
1 Co-op Whole Chicken (roughly 1.5kg)
3 sprigs of fresh Rosemary
5 Garlic Cloves
4 Lemons (for zest and to stuff the chicken)
25g Butter
Salt and Pepper
Oil
- Preheat the oven to 200 degrees and then finely chop your rosemary, zest 4 lemons and crush your garlic
- Melt 25g butter and mix in your chopped rosemary, lemon zest and garlic, add some oil if need be
- Add salt and pepper to your chicken, be sure to cover it well
- Using a pastry brush, coat your chicken all over with the garlic butter mix you prepared earlier
- Squeeze lemon all over the chicken and stuff the chicken with half a lemon.
- Place the chicken in the oven, check after 50 minutes and coat with the chicken juice in the tray
- Leave the chicken in the oven for another 20 minutes or until cooked (I always double-check with a temperature probe!)
- Serve with some crispy roast potatoes, Yorkshire puddings, gravy, and vegetables and pair it with red wine…
- ENJOY!
